The grapes were fully de stemmed and fermented with indigenous yeasts, then gently pressed in a traditional basket press before maturing for 12 months in French barriques. The palate is finely poised and medium bodied, shaped by bright cherry fruit and a savoury herbal edge of sage. Subtle oak
